I’m sharing some Ball Jar Love with a little giveaway! I found these Ball® Sharing Regular Mouth Pint Mason Jars. They’re new for 2017 and available exclusively at The Fresh Preserving Store.

With Mardi Gras a couple of weeks away, I found a recipe for Homemade Italian Giardiniera.

If you’re not familiar with Giardinera, (pronounced Jar-dih-NAIR-ah)  it’s Italian and means ‘from the garden’. It’s a pickled vegetable medley that usually includes cauliflower, carrot, celery or fennel, and hot or sweet peppers.  It’s generally used as a condiment on sandwiches or served on antipasto platters. You can make it mild or hot according to your taste and heat tolerance. In Chicago, it’s usually hot and enjoyed as a topping on Italian beef sandwiches. In the South, a milder version of giardiniera is used for the olive salad in the muffuletta sandwich in New Orleans.

You can find Giardinera in the grocery store near the olives or pickles, but it’s easy to make in advance. It’s brined overnight and then marinates for 48 hours. This recipe makes approximately 2 quarts (4 pint jars) so there is plenty to share and will keep several weeks in the refrigerator. You can also make a smaller batch, vary the vegetables, adding more or less of your favorites, cutting them larger for antipasto or smaller to use as a condiment or relish.

Homemade Giardiniera, recipe adapted from Allrecipes

Ingredients

2 green bell peppers, diced (I used 1)

2 red bell peppers, diced (I used 1 red and 1 yellow)

4 – 8 fresh serrano peppers, sliced, depending on desired heat level

1 celery stalk, diced

1 medium carrot, diced

1 small onion, chopped

1 /2 cup cauliflower florets (I used 1 cup)

1/2 cup pickling or kosher salt

2 garlic cloves, minced

1 tbsp. dried oregano (I used Italian seasoning)

1 (5 oz.) jar pimiento stuffed green olives, drained and chopped

1 tsp. red pepper flakes

1/2 tsp. black pepper

1 cup white vinegar

1 cup olive or canola oil (I used extra light olive oil)

Directions:

Place the peppers, celery, carrots, onion, and cauliflower in a large bowl. Mix salt with 2 cups cold water, stirring until dissolved. Pour salt water in bowl over vegetables and top off with additional cold water until vegetables are covered; stir. Place plastic wrap over the bowl and refrigerate overnight.

The next day, drain water and rinse vegetables thoroughly to remove excess salt. Whisk together garlic, oregano, red pepper flakes and black pepper, oil and vinegar. Combine rinsed vegetables with chopped olives in non-reactive bowl and pour vinegar/oil mixture over and cover. Allow to marinate in refrigerator for 48 hours, stirring occasionally. Divide mixture into jars with seasoned oil/vinegar. Sealed jars will keep in refrigerator for several weeks and become more flavorful the longer it sits.

Ingredients

  • *Olive oil will solidify and turn cloudy when refrigerated but will liquefy again at room temperature. Use canola oil to avoid the oil solidifying.
  • Adjust this vegetable/pepper medley to your taste, with more carrot and olives, adding zucchini, fennel, or sweet banana peppers. Enjoy it on a hot dog or bratwurst, in pasta salad, as a pizza topping, on a sub or muffuletta sandwich or eat it straight from the jar.
  • Sealed jars will keep in refrigerator for several weeks and get more flavorful the longer it sits.

    I have been a ball jar fan for years and years. I love that they are so versitle. A couple of years ago when you posted at different times about the colors that Ball had out, I immediately bought the purple ones and the blue ones (my fav colors). I have shared them with family and friends. I like to use Ball jars for storing food and other items as well as using as a vase for flowers. I love these newbies in the canning jar family. I especially like their unique shape. I would use them for storage and flowers!

    I usually buy Giardinera, but after looking at your recipe, I believe I’ll make it myself! Packing it in those jars would make nice little gifts for my family when I have an abundance of peppers from my garden. The pasta salad looks divine also!

    I love the new look and the charitable donation I think I would keep one set for flowers, and pretty storage for my paint brushes in my studio. I’d give the other set to my sister who does can and makes the best family recipe for bread and butter pickles.

    The pictures of the giardinera are like eye candy. The colors are absolutely stunning. I am a great fan of ball jars, and use them almost everyday in a multitude of ways. Storage, flowers, collections, canning etc. My most frequent use is for my lunch. I usually make a few meals ahead of time and place in the jars. I freeze some right in the jar, and the others wait in the refrigerator for me to grab for my lunch at work. I recently made your sausage, butternut squash chili. Soo yummy. Will share on fb

    I would use the new Ball sharing jars for card parties that I host for my 83 year old Mom and her friends. Their ages range from 83 to 94 and they are still Playing Cards!!! It always excites them when I have something new that they have not seen! I usually have a small gift for them, so the jars would be a great re-gift with flowers and a place card in the jars at each place setting. I serve them lunch before they play cards in my 3500square foot “She Shed” that is 5 minutes away from my home. I am so blessed to be able to share my beautiful 97 year old Craftsman “She Shed” with my friends and family. I follow your blog and also follow you on Pinterest.     I love these new jars. I’d use them for all of the things you mentioned. I’d use them as glasses for a dinner party with a cute bow around the top and some pretty paper straws to sip through. Then I’d use one to hold pens on my craft table, and use them for food storage and for flowers when I have fresh flowers available. I might also give one away, although it would be hard to part with it! I have used the Quatro jars you introduced me to for gifts filling them with candy or craft supplies. Thanks so much for always finding these great new products. This is the first I’ve seen these and will definitely have to buy some even if I win a set.

My husband uses clean used food jars so he doesn’t get these pretties, haha, but it’s be nice if he had some that look so nice so maybe for him, too, if I am feeling generous. ♥

    omigosh…these are the cutest jars EVER!! i love them not only for just stuffing things in them, but also for canning that something special to give as gifts. i am always giving the things i can as gifts. i mostly am in love with them. thank you for the recipe…it sounds divine. i have a son who would love this! thank you for the generous giveaway.

    What a lovely giveaway Mary! My husband is always asking why I need so many jars, sigh, men! I am not a canner or preserve maker but I love jars to store snacks, leftovers, toting salad, holding paint brushes and crafting. A girl just can’t have too many jars! I love the wide mouth style especially. What a wonderful way to give back, pay it forward and share the love :)

    Oh wow! Perfect timing for your giardinera recipe. Was just thinking about making a muffuletta salad. We’ve tried store bought giardinera but didn’t care for it (heat, we’re wimps).     Of use for canning..I love mason jars for my my things..id use for my make in Sunday for the week grab and go overnight steel cut oats and salads..and, a craft I’ve been dying to do is a porch chandler with tea lights and mason jars..or hang in my trees!

    The picture of the Garden mixture looks just like a work of art…I love that mixture…I use my Ball jars fir Storage, Canning, Crafts and Flowers..I recently purchased the Blue.     I would use the jars for our food pantry at church. We have several families that shop regularly for food that our church members donate. I would fill them with non-perishables and give them to our pantry. Not only would some families benefit from the donated food, but they would also have some beautiful glass jars to reuse again!     The new Ball jars are fantastic! The versatility of them offers many creative ideas to bloom! I would love to use them as special favors for each place setting at my family Easter dinner. Tucked inside you will find chocolate candies, a bunny cookie, all on top of edible Easter grass. A precious tag with an Easter Bible verse would be entwined around the top in a pretty bow with a faux posey.

    I have not seen these new jars! I was just in Target perusing the jars too; they must be a bit behind. I love the groove around the top for a bow or label and the beveled shape. It’s a good thing that there are more than two in the package because they would be hard to part with. Plus they are wide-mouth it looks like, which is always best.

    I grew up in New Orleans and I haven’t made a muffuletta sandwich in a long time. When I was a kid my mother’s maid used to make the pickled salad (yes, in that very politically incorrect time) and I would pick out the cauliflower bits because I was just a very odd kid.

    Hello Mary – thank you for sharing the jars – as well as, the recipe and your lovely garden shed. I love it! I would use the jars for centerpieces. I belong to a Garden Club and host our luncheons once a year. I am always looking for new ways to do things. I also would use them to store goodies. My grandkids love to find my stash of candies.     I love that Ball is supporting hunger relief, and I love collecting Ball jars, The green & blue ones are my favorite! We used many of them, along with clear, smaller sized Ball jars scattered thru-out the house for my daughter’s graduation party. My mother is so awesome, she brought all sorts of beautiful flowers trimmings from her garden for display in the jars. I also love to use them for storage. One can never have too many jars!     Planning on making the Giardinera and giving as gifts . Of course I frequently make homemade gifts or food items and always place them in a variety of sizes and shapes of ball jars. The always make a lovely presentation and something that can easily be personalized.

    I would use the new jars for a batch of the giardenera. The angles of the jars make it look like jewels . Then also I enjoy using canning jars for storing dry goods in the pantry. I also like to store embroidery floss, buttons, ribbons, thread bobbins and even spools of thread in on shelves in my sewing room.
    I like the old time look.

    The shapes of the jars are what is so unique about them. I’d use for flowers and to hold my paintbrushes. Like them with your silverware in them too so might put extra spoons in them for my coffee station. Great giveaway!
