I’m having a hard time keeping track of days and weeks while sheltering at home, how about you? I had a startling realization this week that Monday is Memorial Day. While North Carolina is easing restrictions and we’re starting to venture out again (with our masks on), Memorial Day will be a different holiday this year as the unofficial start of summer without the normal beach trips or BBQs with friends and family.

One thing remains the same however; Memorial Day is still a holiday for remembering those made the ultimate sacrifice and gave their lives to protect our country and our freedoms.

 I pulled together some recipes from the archives if you’re looking for some patriotic fare for the summer holidays and to celebrate the Red, White and Blueberry! Click on the links in red for the complete recipe.

Watermelons have been arriving in grocery stores, just in time for the holiday weekend and the unofficial start of summer. Serve an American flag formation of Watermelon, Feta and Blueberries for this high-flying holiday. The creamy, salty cheese is the perfect partner to the sweet, juicy melon!

Berry Skillet Cobbler

Individual cobblers are baked in mini skillets with a topping that is rustic and simple to make! Substitute ramekins if you prefer for these easy, mini desserts.

    Mary, Delicious sounding recipes and colorful too. It seems we went from Valentine’s day directly to Memorial Day. Thanks for the ideas. We’re going to a friend’s house for an outing as we cautiously venture out with our masks on. We don’t want to be in a restaurant with strangers so we’ll stay on the screened porch and socially distant between the 3 of us. This will be our first gathering so we’re planning carefully.       Horray for the red, white and blue! What a delicious post! Everything looks so good. Our governor is finally lifting some requirements and we can gather again in small groups of 10, of course keeping our distance. Will have to figure out which one of these beauties to make or I may have to go with the lemon tart featured the other day. So many good treats, so very hard to choose! Thank you!     Love these compilations, Mary. Love your new mask, too. Weirdness abounds. I’ve had to make notes on my calendar to keep track of what I’ve done from week to week. Almost every Thursday feels like a Friday to me, so I get confused at the end of the weeks. Hope you can get some boat time in. Our river is up and swift, so I think boaters will be hesitant to be on the water here. Add it to the list of weird and whacky.

    Hard to keep up with days and Memorial Day came up quickly. The red white and blue goodies look really delicious !
    Maybe it’s just me but my mind is having trouble adjusting to the current page on the right and links to older pages on the left now.
