Roasted Cauliflower Makes This Potato Soup Creamy Without Cream
🛒 Ingredients
Soup Base
-
1½ tablespoons extra-virgin olive oil, divided
-
1 cup chopped onion
-
1 teaspoon chopped fresh thyme
-
5 garlic cloves, chopped
-
1 lb peeled and cubed baking potatoes (about 2 medium)
-
1 lb cubed Yukon Gold potatoes (about 4 small)
-
5 cups reduced-sodium chicken stock
-
1 teaspoon kosher salt, divided
-
1 bay leaf
-
1 lb cauliflower florets (about ½ head)
-
¾ teaspoon freshly ground black pepper, divided
-
1½ cups 2% reduced-fat milk
-
¾ cup chopped green onions, divided
-
½ cup reduced-fat sour cream
Optional Toppings
-
2 oz grated sharp cheddar cheese (about ½ cup)
-
4 slices center-cut bacon, cooked and crumbled
- 4 peeled and cubed Yukon Gold potatoes, roasted alongside cauliflower

🥄 Directions
1. Sauté Aromatics
Heat a large Dutch oven over medium-high. Add 1½ teaspoons olive oil, swirl to coat.
Add onions, thyme, and garlic. Sauté about 5 minutes, until softened and fragrant.
2. Cook Potatoes
Add cubed potatoes, chicken stock, ½ teaspoon salt, and bay leaf.
Bring to a boil, then cover, reduce heat, and simmer 35 minutes, until potatoes are very tender. Remove bay leaf.

3. Roast Cauliflower
While the potatoes simmer:

Preheat oven to 400°F (200°C).

Toss cauliflower florets with remaining olive oil, ¼ teaspoon salt, and ¼ teaspoon pepper on a baking sheet.

Roast 30 minutes, turning once, until cauliflower is golden and tender.

4. Blend Cauliflower
Place roasted cauliflower and milk in a blender.
Cover with lid and towel (to avoid splatters) and blend until very smooth. (alternatively use an immersion blender in your pot for less clean up)
5. Blend Potato Mixture
Add half of the cooked potato-broth mixture to blender. Pulse 5–6 times to chop coarsely.
Pour into a bowl with cauliflower puree. Repeat with remaining potatoes.

6. Combine & Heat
Return blended cauliflower-potato mixture to the Dutch oven over medium heat.
Stir in remaining pepper, ½ cup green onions, and sour cream until melted and creamy.
7. Serve with Toppings
Ladle soup into bowls and top with the rest of the green onions, cheddar cheese, and crumbled bacon.

I’ve had my immersion blender for about 10 years and love it! It saves time, makes for easy clean up and eliminates the possibility of exploding hot liquids as you can use it to blend right in your soup pot.
It’s also great for sauces, smoothies and easy whipped cream. If you’re in the market for one, I recommend getting one that has a beaker/container for blending. Mine predates immersion blenders available now that have attachments, like a whisk and food chopper that would be handy too.

Ingredients
Soup
- 1½ Tbsp extra-virgin olive oil divided
- 1 cup chopped onion
- 1 tsp fresh thyme chopped
- 5 garlic cloves chopped
- 1 lb baking potatoes peeled and cubed, about 2
- 1 lb Yukon Gold potatoes cubed, about 4
- 5 cups reduced-sodium chicken stock
- 1 tsp kosher salt divided
- 1 bay leaf
- 1 lb cauliflower florets
- ¾ tsp freshly ground black pepper divided
- 1½ cups 2% reduced-fat milk
- ¾ cup green onions chopped and divided
- ½ cup reduced-fat sour cream
Toppings (Optional but Recommended)
- ½ cup grated sharp cheddar cheese
- 4 slices center-cut bacon cooked and crumbled
- 4 Yukon Gold potatoes peeled and cubed, roasted along side cauliflower to top bowls
Instructions
- Heat a large Dutch oven over medium-high heat. Add 1½ teaspoons olive oil.
- Sauté onion, thyme, and garlic for 5 minutes, until softened.
- Add potatoes, chicken stock, ½ teaspoon salt, and bay leaf.
- Bring to a boil, cover, reduce heat, and simmer 35 minutes or until potatoes are very tender. Remove bay leaf.
- While soup simmers, preheat oven to 400°F.
- Toss cauliflower with remaining olive oil, ¼ teaspoon salt, and ¼ teaspoon pepper.
- Roast 30 minutes, turning once, until golden and tender.
- Transfer roasted cauliflower to a blender. Add milk and blend until very smooth.
- Add half the potato mixture to the blender and pulse 5–6 times until chunky-smooth.
- Repeat with remaining potatoes.
- Return soup to pot over medium heat. Stir in remaining pepper, ½ cup green onions, and sour cream until creamy and heated through.
- Serve hot with cheddar cheese, bacon, and remaining green onions.
Notes
- Without the addition of butter and cream in the soup, there is room for a little indulgence and flavor from toppings - bacon and sharp cheddar cheese.
- Use an immersion blender to puree cauliflower and potato directly in Dutch oven for less clean up and to reduce risk of exploding hot soup.
- In addition to 2 baking potatoes, I added a little over half of a 28 oz. bag of Yukon Gold potatoes to the pot of soup. The remaining potatoes in the bag I roasted in the oven while roasting the cauliflower, adding as a topping for more potato texture in the soup.
- My cauliflower was on the small side so I used the whole head.

Thanks for yet another GREAT recipe! I made it for dinner tonight and it was a big hit. Very rich, filling and wholly satisfying. I have a very fussy husband who wouldn’t have even tried it if he knew there was cauliflower in it, so a wise wife made sure he never saw it until he was raving about the soup!
