With Thanksgiving just a few days away, I have an easy, no-bake treat that’s great for snacking and sure to satisfy hungry pilgrims, football fans, or tree-trimmers over Thanksgiving weekend!

This popcorn snack mix is a cornucopia of sweet and salty and comes together in about 15 minutes. More of a procedure than a recipe, you can vary this snack mix to your taste, changing the candy, sprinkles and quantities of ingredients.

The sweet and salty combination of popcorn, nuts, pretzels and candy, makes it highly addictive and a crowd-pleaser! I’ve made a version of this candy coated popcorn snack mix for Football SeasonHalloweenChristmasJuly 4thSt. Patrick’s Day, Easter, and Valentine’s Day.

This snack mix starts with popcorn and candy coating or almond bark. I use a ratio of 6 cups of popcorn per 16 ounce package of candy coating/ almond bark, but adjust your candy coating-to-popcorn ratio to your taste. Pop your corn using your preferred method, removing any old maids or unpopped kernels.

Melt the candy coating according to the package direction. I prefer CandiQuik (found on the baking aisle) for the convenience of the microwaveable disposable tray, but any brand of candy coating will work. Mix your melted candy coating with your popcorn in a large bowl, stirring well until coated, then spread the popcorn on wax paper or parchment lined baking sheet(s) to set. While the coating is warm, add your sprinkles of choice to your popcorn (I used an autumn leaves sprinkles mix).

Once your popcorn is set (about 15 minutes), break it into pieces. To your popcorn, stir in your other ingredients. For the sweet ingredients, I added some some candy corn and Reese’s Pieces; for the salty, peanuts, pretzels and Bugles, which look like mini corncucopias! I sent a big batch of this snack mix to my hubby’s office last week and it’s always a hit!

Store your mix in an airtight container until ready to enjoy. The popcorn mix will stay fresh for a week or longer in a sealed container.
